thank you so much for your lovely words, I am so happy that you liked the waffles. I am sorry to hear that the batter was quite tick, it might really be because of the swap of water and seltzer. I make my own seltzer with the SodaStream, but when I lived in the United States I just bought it at HEB (in Texas) or at Harris Teeter (North Carolina). It needs to be really sparkly, to make the dough fluffy and less thick. 
Hope you&#039;ll be able to find it somewhere!

I had issues with the batter being very very thick (as in, cookie batter thick!) and needed to thin it down by adding more almond milk. I&#039;ve had this happen before using Bob&#039;s Mills buckwheat flour... it seems to drink a ton of liquid. Also, because of the buckwheat, my waffles are really deep brown compared to yours, which is fine but I can&#039;t say why...I followed the recipe to the letter otherwise- except that I used H2O instead of seltzer. What brand buckwheat do you use? Thanks so much! ????]]></description>
