<p>Ever since I&#8217;ve fallen in love with <a href="https://www.heavenlynnhealthy.com/the-best-almond-butter/">almond butter</a>, I seriously can&#8217;t get enough of nut butters. Even my sister told me the other day that her Nutella consumption has immensely decreased ever since she started making nut butters, which, if you knew her, is a big deal for her. The good thing about nut butters is that you can literally make them with every kind of nut: almonds, cashews, hazelnuts, pistachios (recipe coming soon) and even brazel nuts. Since I absolutely love roasted cashews, this cashew butter is my new favorite. I added some sea salt, which makes it the perfekt savory spread &#8211; similar to peanut butter, which I love. I eat it with literally anything: on bread, with apple slices, in my porridge and overnight oats, in smoothies and in baked goods. It&#8217;s incredibly versatile and it&#8217;s the perfect butter substitute, just try spreading some healthy chia jam on top &#8211; absolutely heavenly! <span id="more-1496"></span><br />
Cashews are also incredibly healthy. As all nuts, they have a high mono-unsaturated fatty acids content which protects the heart from heart disease. They also contain lots of manganese, a mineral that is mainly important for healthy bones, nerves and thyroid function.</p>
<p style="text-align: left;">It&#8217;s also very easy to make. As with all nut butters, you need a strong food processor though. I&#8217;ve tried it in a regular blender, and the result was anything but satisfying. It&#8217;s really worth it to invest in a food processor &#8211; you can already get great ones for as little as 60 Euros, so it doesn&#8217;t even have to be extremely expensive. Think about all the great things that you can make with them &#8211; including this healthy cashew butter with sea salt.</p>
<p style="text-align: center;">Ingredients:<br />
&#8211; 2 1/2 cups (250g) natural cashews<br />
&#8211; 1/4 tsp sea salt</p>

<p>Start by pre-heating the oven to 180 °C. Spread the cashews onto a baking sheet and roast them for about 8 &#8211; 10 minutes. Be sure to watch them carefully, so they don&#8217;t burn.<br />
Remove the cashews from the oven and let them cool off completely. This is so important that I cannot stress it enough. If you don&#8217;t let them cool, the recipe might not work.</p>
<p>Pour the cashews into your food processor and blend for about 10 minutes until the cashews have completely transformed into a creamy butter. You might need to scrape the butter down from the side a couple of times depending on your food processor. Finally, add the sea salt and blend for another 10 to 20 seconds.</p>
<p>Stored in an air tight container in the fridge, the cashew butter lasts for about 2 &#8211; 3 weeks. (It never lasts that long in my family though, but that&#8217;s not due to spoiling).</p>

<p>I know I&#8217;ve been posting quite a lot of asparagus recipes lately, but it just so happens that it&#8217;s all I eat these days. I&#8217;m still totally crazy about it and I want to eat as much asparagus as I possibly can before the season is over. Actually it&#8217;s my goal is to eat it as often as I can so I will eventually have had enough off it, and won&#8217;t be sad to wait until next year to have it again. We&#8217;ll see how that goes.<br />
This heavenly creamy asparagus soup is just the perfect dish for one of those cold spring nights when you just feel like summer is never going to show up any time soon. The ingredients in this soup just work so well together and they really bring out the best of each other&#8217;s flavors. I didn&#8217;t expect asparagus and coconut to make such an incredible food duo, but the two ingredients are just perfect for each other. Trust me, you are going to love this soup. If white asparagus is not available in your country, I&#8217;m sure you can replace it with green asparagus as well. I just haven&#8217;t tried it yet, so I can&#8217;t guarantee that it&#8217;ll work. If anyone tries making the soup with green asparagus, I would love to hear about it in the comments below.</p>
<p><span id="more-1210"></span>Health Benefits in this creamy asparagus soup:<br />
&#8211; iron (important for healthy red blood cells that transport oxygen through your body)<br />
&#8211; lycopene (antioxidant that helps fight various diseases)<br />
&#8211; manganese (for nerve health)<br />
&#8211; protein (important for a healthy metabolism, immune systems, production of enzymes)<br />
&#8211; vitamin C (good for your immune system, tissue health)</p>
<p style="text-align: center;">Ingredients:<br />
Serves 4:<br />
&#8211; 1 kg white asparagus<br />
&#8211; 4 cups (1 liter) water<br />
&#8211; 2 potatoes (200-250g)<br />
&#8211; 5 tsp coconut milk<br />
&#8211; 3 tsp coconut oil<br />
&#8211; 3 tsp buckwheat or spelt flour<br />
&#8211; 1/2 tsp nutmeg<br />
&#8211; 1 tsp salt<br />
&#8211; 1 tbsp fresh lemon juice</p>
<p>Peel the asparagus and cut off about 1 cm (1/2 inch) of the ends. In a large pot, heat up enough water to cover the asparagus entirely. Add a pinch of salt and agave, and cook the asparagus for about 15-20 minutes.</p>
<p>In the mean time wash and peel the potatoes, then place them in a pot. Add enough cold water to cover the the potatoes entirely. Bring to a boil, and add 1/2 to 1 teaspoon salt to the water. Reduce heat to medium medium or low. Cover the pot with a lid and cook the potatoes for about 15-20 minutes.</p>
<p>Once the asparagus and the potatoes are done, drain them, and set them both aside. Separate the heads of the asparagus from the rest of the stems.</p>
<p>In a large pot, melt the coconut oil. Add the flour and stir well with a whisk until a thick paste forms. Gradually add the water while continuing to stir. Now add the potatoes and asparagus. Transfer the soup into your blender and blend until it has a smooth, creamy texture.<br />
Pour the soup back into the pot and bring it to a quick boil on high heat. Lower the heat to low, and add the remaining ingredients coconut milk, nutmeg, lemon juice and salt. Finally add the asparagus heads to the soup. You may want to add more coconut milk, nutmeg, salt or lemon juice depending on your taste.</p>
<p style="text-align: center;">Serve with bread.</p>

<p>Let me introduce you to my newest addiction: almond butter. Ever since I made our first batch, I have been constantly buying almonds to keep up with our high demand for this delicious nut butter. Since I am technically American at heart, I am of course a big fan of peanut butter, but ever since I tried almond butter I don&#8217;t think I will ever go back. Almond butter is the perfect addition to any meal. I eat it for breakfast, lunch and dinner sometimes. It&#8217;s also a great healthy snack if you combine it with sliced apples or pears. I love it with my morning bowl of oatmeal, in breakfast smoothies, on toast topped with banana slices or homemade jam. It&#8217;s also a great substitution for cream in sauces or soups. You can see, I am pretty obsessed with it.<br />
<span id="more-1176"></span></p>
<p>Making almond butter only requires one ingredient so you couldn&#8217;t even call it cooking really. Unfortunately you will need a high quality and powerful food processor to get the perfect texture. I am really sorry, but I have tried it with my 20 Euro blender &#8211; without success. It doesn&#8217;t need to be a very expensive machine, but it needs to have power to break down the almonds completely.<br />
Since almond butter consists of only one ingredient, it is a very clean food, and totally healthy as well. Nut butter in general is a great way to add some healthy protein and unsaturated fats to your diet. The healthy fatty acids protect our heart and lower the risk of heart disease and type 2 diabetes. Almonds are also an amazing super- and beauty food because of it&#8217;s high vitamin E content. Vitamin E is especially important for healthy nails, hair and glowing skin.</p>

&#8211; copper (important for strong tissue, maintaining blood volume, and producing energy in your cells)<br />
&#8211; mono-unsaturated fats (decreases risks for breast cancer, important for heart health)<br />

After 10 minutes of blending, the almond butter should already have a nice creamy texture. <p>This raw cheesecake is the best healthy cake you will ever try. I almost couldn&#8217;t believe how good it is. Even my family (aunt, uncle, cousins, cousin&#8217;s boyfriend) who had the honor of being my guinea pigs last weekend, was amazed by it&#8217;s taste. Of course everybody loved the base layer &#8211; medjool dates and nuts are just the perfect healthy cake base. The middle layer is an amazing composition of frozen bananas and cashew nuts and the top layer is a symphony of fresh and frozen berries, which makes this vegan cake the perfect cake for a warm summer day. It&#8217;s also more of a frozen treat since it needs to go into the freezer for a couple of hours before you can enjoy it. So if you&#8217;re a big fan of ice cream cake, then this recipe is for you.<br />
<span id="more-1163"></span>Unlike most sugar and fat loaded cakes, this cake is filled with lots of goodness that your body will actually benefit from. Using nuts instead of butter is a great way to substitute saturated fats with healthy unsaturated fats. These monounsaturated fatty acids help lower cholesterol and increase overall cardiovascular health. Of all nuts, almonds contain the highest amounts of vitamin E, which is essential for beautiful nails, hair, and skin. Cashews are a great source of magnesium, which helps with building muscles in your body, and helps protect against high blood pressure.</p>
<p>This berry cheesecake is also only sweetened with natural sweeteners like dates, bananas and a little bit of maple syrup. It&#8217;s still high in sugar, but with every bite of this cake, you fuel your body with amazing vitamins and minerals that are found in these alternative sweeteners. The main source of goodness in this cake, however, are berries. Berries are basically antioxidant power houses. Strawberries, for example, regulate the blood sugar and decrease the risk of diabetes type 2. They also have a high amount of vitamin C, which strengthens the immune system and protects us from harmful radicals. Blueberries are literally &#8220;happy berries&#8221; as they enhance the mood, improve vision, and help fight various diseases as they contain the highest antioxidant amount of all berries. They truly deserve the title &#8220;super foods&#8221; since they improve overall health and well-being. With so much packed goodness, there is no reason not to try this healthy cake immediately.</p>
<p>Health benefits in this raw berry cheesecake:<br />
&#8211; biotin (important for blood sugar balance and skin health, necessary to build healthy fats that keep the skin moist and soft)<br />
&#8211; fiber (important for heart health, lowers cholesterol levels)<br />
&#8211; magnesium (important for a healthy nerve system, muscle health, energy production)- manganese (for nerve health)<br />
&#8211; mono-unsaturated fats (decreases risks for breast cancer, important for heart health)<br />
&#8211; potassium (lowers cholesterol levels and blood pressure)<br />
&#8211; protein (important for a healthy metabolism, immune<br />
systems, production of enzymes)<br />
&#8211; vitamin C (good for your immune system, tissue health)</p>
<p style="text-align: center;">Ingredients:<br />
For the the base:<br />
&#8211; 18 Medjool-Dates (350g)<br />
&#8211; 1 cup (100g) almonds<br />
&#8211; 1 cup (100g) pecans<br />
&#8211; a pinch of salt</p>
<p style="text-align: center;">For the middle layer:<br />
&#8211; 2 bananas<br />
&#8211; 1 cup (100g) cashews<br />
&#8211; 1 cup (100g) strawberries<br />
&#8211; 1/3 cup (100g) maple syrup<br />
&#8211; ¼ cup (50ml) fresh orange juice<br />
&#8211; 1/2 tsp lemon zest</p>
<p style="text-align: center;">For the top layer:<br />
&#8211; 1 banana<br />
&#8211; 3 medjool dates<br />
&#8211; 1 cup (100g) cashews<br />
&#8211; 1 cup (150g) blueberries<br />
&#8211; 1 cup (100g) strawberries<br />
&#8211; ¼ cup (50ml) fresh orange juice</p>
<p>The night before you want to make this cake, you need to do some preparations. Peel and slice the bananas and freeze them in a ziplock over night. Wash the blueberries and freeze them as well. Pour the 2 cups (200g) cashews into a bowl and cover them with water completely and oak them overnight.<br />
You can use frozen blueberries instead of fresh ones, however, they can change the cake’s consitency. If you use store-bought frozen blueberries, then you won’t need the orange juice in the top layer.</p>
<p>For the base:<br />
Start by placing the nuts into a food processor and pulse a few times until they are nicely broken down. Pit the dates, and cut them into little pieces. If you habe a strong food processor, then you can mix the dates and nuts and blend them into a nice sticky dough. This sould only take a few seconds.<br />
If your food processor isn’t strong enough, you can totally use your hands instead. Simply sqeeze the date pieces with your hands until the dates become nice and soft and you could potentially form little balls with it. Then gradually add the nuts and knead them into the date paste. Do this until you have evenly combined the two ingredients (nuts and dates).<br />
Once you have a nice date-nut-dough, press it into the base of a cake tin and place it in the freezer for 15-20 minutes.</p>
<p>For the middle layer:<br />
Drain the soaked cashews, and place half of it into the food processor. Add all other ingredients and blend until smooth. Take the cake tin out of the freezer and pour the cashew mix on top of the base layer. Place the tin back into the freezer for at least 30 minutes.</p>
<p>For the top layer:<br />
Place the rest of the cashews into the food processor and add all remaining ingredients. Be sure to pit the three dates, and cut them into small pieces before adding them to the machine. Take the cake tin out of the freezer once again, and pour the berry layer on top of the middle layer. Put the cake tin back into the freezer for at least 4 hours before serving.</p>
<p>Before you can serve this cake, you’ll need to take it out of the freezer and allow it to warm up for 15 minutes. Otherwise you won’t be able to cut it and your guests will probably get a brain freeze.</p>

I love summer drinks. They are a great alternative to plain boring water, and keep you hydrated on hot and humid summer days. I am constantly searching for new ideas that get to me to drink more water. I sometimes find it really hard to stay hydrated during hot summer days, because I feel like water just won&#8217;t do it alone sometimes. I love water, don&#8217;t get me wrong, but sometimes it’s nice to drink something other than plain water. I’m not talking about sugar-loaded soft drinks, but about refreshing spritzer. Spritzer are a delicious combination of any kind of fruit juice and sparkling water. It’s the most famous drink in Germany (apart from beer obviously), and almost every German loves it. You can make a Spritzer with any kind of juice that you like. Apple is the most famous one, but rhubarb or passion fruit have become increasingly popular these past few years. When I am talking about fruit juice, I mean real, clean, no sugar added juices, not the nasty concentrated sugar bombs you find in most supermarkets. If you live in northern Germany, I highly recommend visiting the &#8220;Altes Land&#8221;, the biggest contiguous fruit-producing area in Central Europe. Especially during this time of the year, it&#8217;s so wonderful to stroll through acres and acres of cherry and apple blossoms. It really is home to me, and I love how you can literally smell the fresh fruits during the seasons of summer and fall. Lucky for me, we technically have a juice-press company in the family. The freshly-pressed juice from the <a href="http://apfelhaus.de/index.php">Hofmosterei</a> is my all time favorite apple juice. If you&#8217;re ever in the area, be sure to pay them a visit. If you live in Hamburg and would like to try their juice, it&#8217;s sold in nearly every Rewe supermarket.<br />
<span id="more-1155"></span>This homemade Spritzer combines delicious apple juice with the healthy green tea powder matcha. It’s the best healthy way to drink more water while adding important nutrients to your diet. Matcha is one of the healthiest superfoods you will find. It is packed with antioxidants and valuable vitamins and minerals such as vitamin C and magnesium. It also has a positive effect on concentration, so it’s the perfect addition to a busy day at work. &#8211; 2 cups (500ml) sparkling water<br />
&#8211; 1 1/2 cups (400ml) fresh apple juice<br />
&#8211; ½ tsp matcha, for example from <a href="http://www.matcha108.de">matcha108</a><br />
&#8211; a touch of lime juice (optional)</p>
<p>Simply pour the apple juice and the matcha powder into your blender and blend until the matcha is dissolved completely. Pour the juice into two big glasses and add sparkling water until the glasses are full. You can vary the ratio of apple juice and sparkling water according to your taste. I like it less sweet than most people.</p>

It seems like chia pudding is everyone’s favorite on the blog. Beside from overnight oats or porridge, it’s my favorite breakfast dish. It’s also so heavenly versatile, as you can add whatever you like to it. This version with rasberries and bananas is my new favorite. It only takes a couple of minutes to prepare, and then you just let it sit in the fridge over night. Is there anything better than to eat a pink breakfast in the morning? I think not. As everything chia related, this breakfast inspiration is also packed with valuable nutrients, which I have listed below because the list of vitamins and minerals in chia seeds seems to be endless. <span id="more-1124"></span>You really can’t go wrong with this breakfast as it keeps you satisfied for hours, and gives you enough energy to master anything in the morning. It’s also a great post-workout meal because it is packed with potassium and magnesium which is exactly what your muscles need to regenerate. Of course you can also enjoy it as a healthy snack or dessert – anything that makes you happy and healthy. I really hope you like it or at least enjoy the pretty picture. Serves 2<br />
&#8211; 1 ¼ cup (about 300 g) almond milk (or any other milk at hand)<br />
&#8211; 2 tbsp chia seeds<br />
&#8211; 4 tbsp (gluten-free) oats<br />
&#8211; 2 cups (120g) frozen raspberries<br />
&#8211; 1 banana</p>
<p>Simply mix the almond milk, chia seeds and oats in a glas or breakfast bowl and let it soak overnight. The next morning, peel the banana and blend it together with the rasberries until smooth. Now begin layering the parfait with the chia-oat mix on the bottom, then a layer of the mango-banana blend on top. Go on like this until you’ve reached the top. Sprinkle with more mango on top if desired.<br />
If you want a quicker way, then simply mix the banana raspberry puree with the chia seeds, oats, and almond milk, mix it all together and let it soak over night. It may not look as pretty but it will taste just as amazing.</p>

If you’ve been following my blog or my Instagram account then you’ve probably noticed that I have a thing for delicious breakfasts like porridge or granola, and also for blueberries. I just love blueberries! They’re amongst my favorite berries because they are just so naturally sweet and delicious. Especially in the summer when you get them locally I go through at least one big batch a day. As all other berries, blueberries are great for your health as they are packed with antioxidants , which protect your whole body from free radicals. That’s why I like to think that berries make you pretty and help you glow from the inside out.<br />
<span id="more-1087"></span>Since blueberries are about the sweetest berries you will find, they are perfect for this recipe as they make this granola naturally sweet. They also make your granola purple, which I love.<br />
For a little extra goodness I added some millet to this recipe. This might sound very strange especially since I used it raw, but it just adds that extra crunch to the granola, which I love. In my opinion there’s nothing better than sweet and crunchy granola.<br />
Millet is not only crunchy, it also has great health benefits. The gluten-free grain has a high iron content (about 1/2 cup (100g) provide more iron than the same amount of red meat), and it is packed with good minerals such as magnesium, manganese, copper and zinc. Millet is also extremely skin-friendly, and won’t cause break-outs or pimples as other grains do. Thus millet is really a beautifying grain – one more reason to add it to your morning breakfast bowl. I hope you enjoy this homemade granola just as much as I do.</p>

&#8211; copper (important for the development of the myelin sheath that surrounds the nerves; important for the transformation of melanin which is involved in the pigmentation of hair, eyes and skin)<br />
&#8211; iron (important for healthy red blood cells that transport oxygen through your body)<br />
&#8211; lauric acid (prevents heart diseases and lowers blood pressure)<br />
&#8211; mono-unsaturated fats (decreases risks for breast cancer, important for heart health)<br />
&#8211; magnesium (important for a healthy nerve system, muscle health, energy production)<br />
&#8211; potassium (lowers cholesterol levels and blood pressure)<br />
&#8211; vitamin B (lowers blood pressure, important for healthy nerves, and energy production)<br />
&#8211; zinc (important for growth, skin, and a healthy immune system)</p>
<p style="text-align: center;">  <br />
Ingredients:<br />
&#8211; 2 cups (160g) (gluten-free) oats<br />
&#8211; ½ cup (80g) millet<br />
&#8211; 1 cup (120g) sunflower seeds<br />
&#8211; ½ cup (60g) pumpkin seeds<br />
&#8211; ½ cup (75g) raw unpeeled almonds (with skin)<br />
&#8211; ½ cup (60g) flax seeds<br />
&#8211; 2 tbs virgin coconut oil<br />
&#8211; 1 cup fresh or frozen blueberries<br />
&#8211; 3 tbs maple syrup or agave<br />
</p>
<p style="text-align: left;">Preheat the oven to 180°. Start by putting the almonds into a food processor and crush for 2-3 pulses until they are broken into pieces. They should not be completely crushed, you still want to be able to identify them as nut pieces. Place the crushed almonds into a large bowl. Add all the dry ingredients except blueberries, and stir well until the ingredients are combined.</p>
<p>Next, melt the coconut oil in a small sauce pan. Add the agave, and stir well until everything is dissolved. Add this sticky mixture to a blender together with the fresh or frozen blueberries and mix well so you have a nice smoothie-like texture.</p>
<p>Now pour the sweet blueberry mix over the dry ingredients and mix well until everything is slightly sticky.</p>
<p>Pour the granola on a baking sheet which you have aligned with parchment paper, and bake for about 30-40 minutes. After 10 minutes or so, take the pan out and stir well so the outer edges do not get burned. Repeat this every 5-10 minutes for the rest of the time.</p>
<p>After 40 minutes, take out the tray and leave it to cool for about 20 minutes.<br />
By this time the granola should be nicely crunchy but not burned and your kitchen should smell devine.</p>
<p>Serve with milk, non-dairy milk, yoghurt or non-dairy yogurt, top with fruits. Stored in an air-tight container it should taste amazing for 3-4 weeks.</p>

<p>Ever since I had my first sip of almond milk I have been in love. I discovered nut milk during my time in Texas, when I still thought that I was lactose intolerant. A friendly person at Whole Foods recommended almond milk instead of the very sweet lactose free milk, and fortunately I gave it a try. I admit that switching completely from cows milk to almond milk took me some time. First, I mixed it with cows milk and then I gradually increased the amount of almond milk in my cereal bowl. It takes some time getting used to the taste, but once you learn about all the health benefits of almond milk, you will want to try it with everything. At least that’s how I feel about it.<br />
<span id="more-1070"></span>Almond milk is full of healthy vitamins and minerals, and thus really deserves the title super-milk in my opinion. The amount of vitamin E in one cup of almond milk already covers 50% of the recommended daily intake of the beautity vitamin. It is a natural health booster, which makes your skin, nails and hair glow – at least that’s what I tell myself. Rumor has it though, that almond milk also has a higher calcium content than cows milk, but I have to tell you that this is unfortunately not true. If you are switching to almond milk, then you need to receive your daily dose of calcium from somewhere else such as from green vegetables like broccoli, rucola or algea (sushi!).<br />
The Glycemic Index (the index which shows the effect of a certain food on our blood sugar levels) of unsweetened almond milk is also very low, which means that almond milk does not significantly raise our blood sugar levels, thus it does not increase our risk of getting diabetes type 2. It also means that the little amount of carbohydrates present in almond milk is turned into energy and not into fat. If you’re watching your weight, then almond milk is great for you because it contains almost three times less calories than cows or soy milk. The latter also often contains many nasty additives and preservatives, which is why almond milk is definitely a better milk substitute than soy milk.<br />
Unfortunately almond milk can be quite expensive which is why homemade almond milk is not only a healthier but also a cheaper alternative to store-bought nut milk. With only one cup of almonds you can get almost a liter of almond milk, which is defintely cheaper than buying it from the store.</p>
<p>Health benefits in this homemade almond milk:<br />
&#8211; biotin (important for blood sugar balance and skin health, necessary to build healthy fats that keep the skin moist and soft)<br />
&#8211; magnesium (important for a healthy nerve system, muscle health, energy production)<br />
&#8211; manganese (for nerve health)<br />
&#8211; vitamin B (lowers blood pressure, important for healthy nerves, and energy production)<br />
&#8211; vitamin E (antioxidant against free radicals, prevents skin ageing<br />

<p style="text-align: center;">Ingredients:<br />
&#8211; 1 cup (150g) of blanched almonds<br />
&#8211; 3 cups (750ml) of water<br />
&#8211; 1 tsp agave (optional)<br />
&#8211; ½ tsp cinnamon (optional)<br />

<p style="text-align: left;">The day before you want to make your almond milk, you need to soak your almonds for at least 8 hours in order for this recipe to work. Be sure to cover every nut with water and let it soak preferably over night.<br />
The next day, drain your almonds and put them into a blender. Add the 3 cups of water and blend everything for at least 1 minute until you have a nicely smooth milk.<br />
Now place your jelly bag over a large bowl and pour the almond milk through the bag. Finally drain the rest of the water with your hands. Almond milk can taste a bit strange in the beginning, so you might want to add some sweetener such as agave and maybe even some cinnamon to make it more tasty.</p>
<p style="text-align: left;">Store the milk in an airtight bottle in the fridge and it should last for about a week or so.</p>

	<p>This recipe is from my sister May. Since she has the celiac disease (a severe form of gluten intolerance) the recipe is completly gluten-free. If you leave out the feta cheese, it is even vegan.<br />
The recipe is so simple and it has been my boyfriend and my go-to-recipe for the past couple of months. Not only is it easy and fast to make, it is also packed with great nutrients. It’s also a great recipe to make as your work lunch – it will keep you full all afternoon since it contains lots of protein from the chickpeas, but it won’t let you fall into the afternoon hole of fatigue.<br />
<span id="more-352"></span> Health Benefits:<br />
&#8211; iron (important for healthy red blood cells that transport oxygen through your body)<br />
&#8211; lycopene (antioxidant that helps fight various diseases)<br />
&#8211; manganese (for nerve health)<br />
&#8211; protein (important for a healthy metabolism, immune systems, production of enzymes)<br />
&#8211; vitamin C (good for your immune system, tissue health)</p>
<p>The beets are a great source of iron, the red pepper is the world’s best source of Vitamin C, tomatoes are packed with the anti-oxidant Lycopene which helps fight various diseases. The fresh mint adds the extra fresh touch to the recipe.<br />
Even though I admit that the pre-cooked beets do not contain as many nutrients as the fresh ones do, they are a great option for all of us lacking time to prepare whole meals. If you want to make yourself feel better about the packaged beet, use raw chickpeas and soak them over night. That way you eliminate all the preservatives that canned chickpeas contain. But since nobody’s perfect, it is perfectly fine to use the canned ones. None of us is perfect and at least you’re trying to eat better by preparing this recipe.<br />
