Hi Joanna, 
you can use any apples - cooking apples will get a bit too moushy for my taste, I prefer my apples to be a little more sour and solid, if that makes sense. :D

Aw, Taci, you made me blush there a little. Of course you can definitely sub them with plums, it works just fine. You may need to add a little more maple syrup as plums tend to be less sweet than damsons, but honestly, they probably taste the same. It&#039;s funny because damsons are much more common here than plums. I&#039;ve never seen damsons in the U.S. when I lived there, but I remember eating the best plums in a whole foods in Albany. Delicious!
