Hi there,
I am making these mini stollen in advance for a Christmas party and want to freeze them however, I wasn’t sure if it would be best to make, bake and then freeze or whether to just roll them, freeze and then defrost and bake on the day. What do you think?

Hi there - I am planning to try this recipe using the gluten free flours and making a large version. Have you had anyone try this combo before?
I used to make the more traditional version but in the last few years i have become vegan and my younger daughter has been diagnosed as coeliac so now Christmases need to be vegan and gluten-free. Am enjoying sourcing the usual pies, puddings cakes and biscuits (cookies) in vegan, gluten-free versions.

Hi Jacki,
yes, it's actually rather common to store Stollen for a couple of weeks even, however, I have not stored this one for more than a week, and I'm not sure how long it will last. But my mom always wraps it in plastic wrap (not very environmentally friendly), or you could try bee's wax paper. She stores it in the fridge if I'm not mistaken.
Hope that helps!
Best,
Lynn

Hi Nina,
absolutely! I've already had some readers make one large stollen instead of the small ones (German readers though). Maybe try to add a little bit more water to the filling so it will release some of its moisture into the dough. I have not made a big one myself, so I cannot completely vouch for it, but I don't see why not.
So happy to hear that you all loved the little ones! Yay!
xx

Hello, I have one question..Is it possible to make one big stolen? I'm worried it would turn out too dry, because it is from whole spelt flour? But...I did made little ones a week ago and the recipe is just fantastic. :) We all love it. Thank you! :D

In reply to <a href="https://www.heavenlynnhealthy.com/healthy-stollen-german-christmas-bread/#comment-8868">Georgina</a>.

Hi Georgina,
I have not tried it without oil, so I cannot guarantee that it'll work. If you're oil free then I guess applesauce would be my first guess. Let me know if it worked out in case you will try it.
xx

Hi! Is there any way to replace the oil? Maybe like banana or applesauce? :)
