Hi Kaja,
I use sparkling water in many baked recipes, as it makes the dough more fluffy and serves as an egg-replacement, too. I’m sorry to hear that the texture was dry and dense – I found them to be quite moist when I made them. Of course they taste differently than traditional muffins, but I’m glad you enjoyed the taste.

I had a question; is there a specific reason why you use sparkling water?
I made the muffins yesterday (I tagged u on instagram) and the taste was great, the texture a bit dry and dense, but I guess that’s normal with these ingredients..? Anyways, just wanna say that I really like your blog, great recipes etc so keep it up!!!
