Even better: this recipe is the ultimate proof that healthy breakfast requires zero effort. Are you as excited as I am?<span id="more-5497"></span>All you got to do is buy all oft he ingredients, although I’m betting that most of you already have all of them in your pantry. And then you’ll open the jar, put all of the ingredients into the jar, close the jar, and place it in the fridge overnight. I&#8217;ll put this into bullet points, so we can all remember it better ;-).</p>
<ul>
<li>Cut the apples into small pieces.</li>
<li>Mix all of the ingredients in a jar.</li>
<li>Place that jar into the fridge.</li>
<li>Enjoy it in the morning with a smile.</li>

<p>I don&#8217;t think anyone can now argue that eating healthy in the morning is time-consuming or expensive. Of course, there are a few hacks that will take your overnight oats to the next level. For starters, I am a huge fan of apples in my overnight oats. Especially sweet and sour apples such as <a href="https://www.honeycrunch.com/de/" target="_blank" rel="noopener noreferrer">Honeycrunch</a>. They add a natural sweetness and tangyness to the oats. Also, they are rich in vitamin C and the fiber pectin, which keep us satisfied longer. Meaning you won&#8217;t be craving that mid-morning snack anymore. Honeycrunch apples definitely kick your morning butt out of the door with this recipe, and they stay crunchy even if soaked overnight with the oats and oat milk.</p>
<p>The other overnight oat hack is cardamom. Now, I know that not everyone is too keen on cardamom. I think it needs to go into overnight oats, but you might want to start with a pinch and then work your way up as you get used to the taste.</p>
<p>I also like to make my overnight oats with oat milk lately, because it&#8217;s a naturally sweet plant-based milk and usually requires no additional sweetener. So if you&#8217;re currently fasting sugar (not fruit sugar), then you can still enjoy this delicious breakfast.</p>

<p>These apple cinnamon muffins are simply heavenly (otherwise they wouldn&#8217;t be on this blog of course). I&#8217;ve uploaded a photo of them on Instagram a few weeks ago, and have been asked every day since then when I was going to share the recipe on the blog. I wasn&#8217;t 100% satisfied with their texture, so I had to make a few more batches to finalize the recipe, and today it is finally ready to be shared with you. <span id="more-2636"></span></p>

<p>Growing up in an area that is home to the most delicious apples, I have a special connection to the little red (or green) fruits. Unfortunately I am a tad bit spoilt when it comes to apples, and I only like the really crisp and sweet and sour ones like Braeburn. For this recipe, however, the sweeter the apples the better.</p>
<p> </p>
<p>Apples are one of the healthiest fruits on the planet. They are an amazing source of the fiber pectin, which aids digestion and regulates blood sugar. They also contain a whole array of vitamins and minerals, such as vitamin C, one of the most well-known antioxidants, and minerals such as magnesium, iron or potassium, all of which are vital for healthy body functions.</p>
<p>Instead of refined white flour, which can be found in most apple-cinnamon muffins, I use a mixture of ground almonds, buckwheat and oats. This not only makes the muffins gluten free, but also adds a huge amount of healthy, plant based protein to the treats. They also come with a heavenly chore of apple sauce, which is my favorite part about them. If you think that this is strange, then just leave this part out, but I swear, then you&#8217;ll be missing out.</p>
<p></p>
<p>Finally I just want to add one more thing before I let you indulge in their deliciousness: as with all baked goods, these muffins still contain sugar, fat and carbohydrates. Even though they are a healthier option, and their sugar is unrefined, and their carbs are mainly fiber, I would treat them like regular muffins. As I always say: go crazy on the veggies and moderately enjoy sweet treats. And now enough of the lecture and happy baking.<br />

Grease the muffin tin with coconut oil.</li> <li class="instruction" itemprop="recipeInstructions">Add about three tablespoons of the almond milk and the arrowroot powder to a bowl and whisk well until the powder has completely dissolved. Then add the rest of the almond milk and the teaspoon of apple cider vinegar and set aside.</li> <li class="instruction" itemprop="recipeInstructions">Now add the chia seeds and water to another bowl and let it thicken for about 10 minutes.</li> <li class="instruction" itemprop="recipeInstructions">Grate one of the apples and cut about half of the other one into thin strips. This will be used to decorate the muffins. You can either eat the other half or store it in the fridge for breakfast.</li> <li class="instruction" itemprop="recipeInstructions">Now add the oats to a food processor or strong blender, and break them down to a flour. Add all the other dry ingredients and mix well. Now add the chia-egg, almond milk, coconut oil and about &#8531; a cup (80g) of the apple purée. You can either mix it in your food processor or you can use a hand mixer to do so. Now add the grated apple and carefully mix it into the dough. If you are using a food processor, be careful not to use too much power or the apple will completely dissolve in the dough.</li> <li class="instruction" itemprop="recipeInstructions">Next, add the dough to the muffin tin, only filling the holes half way up. <p>I normally don&#8217;t post on Mondays, but today is different because tomorrow is the first December, and I wanted you to have a healthy Christmas cookie recipe in case you wanted to bake some this week. In Germany we have a wonderful Christmas tradition called &#8220;Christmas calendars&#8221; where you open a door every day from December 1st until December 24th. Christmas calendars are traditionally filled with chocolate, but over time, people have made a very big deal out of them, so now they are usually stuffed with little gifts, baked goods, pictures or whatever else comes to your mind. It&#8217;s a wonderful tradition and I wanted to share a nice Christmas calendar filling idea for the very late ones of you: Healthy Almond and Cinnamon Christmas Stars. These traditional German Christmas cookies not only make your kitchen smell incredibly Christmassy, they are also really good for you! I&#8217;ve conducted my usual healthy kitchen swaps: I used coconut sugar for normal, white sugar, chia eggs instead of eggs, and powdered them with a little xylit instead of powdered sugar.<span id="more-2385"></span></p>

<p>Coconut sugar has gotten a lot of attention lately, and I have become more and more of a fan. Coconut sugar is proven to be a lot healthier than white sugar, because it has a very low glycemic index, which prevents the blood sugar level from spiking. Thus, its energy is released slowly and steadily into our blood, allowing us to feel satisfied and energized for a longer period of time. Therefore coconut sugar is a great sugar alternative especially for diabetics, because it prevents sugar spikes and lows. Coconut sugar is are also filled with many minerals such as potassium, iron, magnesium or zinc, that you won&#8217;t find in normal white sugar.</p>

<p>The combination of freshly ground almonds, Chia seeds, coconut sugar, maple syrup, cinnamon and vanilla is simply divine! Your going to love these cookies this Christmas, I promise!</p>

Whisk together with a fork and set aside to thicken for about 10 minutes.</li> <li class="instruction" itemprop="recipeInstructions">Place the coconut sugar, ground almonds, cinnamon and vanilla powder into a food processor or big bowl. If you are using a food processor, then mix it shortly. If you are using a hand mixer, just quickly mix everything.</li> <li class="instruction" itemprop="recipeInstructions">Add the chia-mix and maple syrup and combine everything for about 30 seconds until a sticky dough forms. If the dough is crumbly, and not sticky, add a teaspoon of cold water.</li> <li class="instruction" itemprop="recipeInstructions">Pre-heat the oven to 160°C (320°F).</li> <li class="instruction" itemprop="recipeInstructions">Roll the dough out between two pieces of baking paper. Make sure not to roll it out too thin - it should be around 5 mm thick. Using star shaped cutters, cut out about 30 stars.</li> <li class="instruction" itemprop="recipeInstructions">Place the cinnamon stars on a baking tray lined with baking paper and bake for 8-10 minutes until golden brown.
