<p>If you live in Germany like me, then you know that summer is once again being a diva over here. It&#8217;s been a typical northern European summer this year: lots of rain, wetness, cold and only occasional peaks of sunshine. I was lucky to be able to spend the last two weeks in Austria with the most beautiful weather, but coming home was such a disappointment weather-wise. I did not feel like cold smoothies at all these past mornings, and I even felt like making oatmeal for breakfast. Instead, I chose this summer baked berry oatmeal, which is a nice change from my usual <a href="https://www.heavenlynnhealthy.com/healthy-bircher-muesli/">healthy bircher muesli</a> in the morning. It&#8217;s so nice to eat something warm for breakfast, without feeling like it&#8217;s already fall or winter. <span id="more-3433"></span></p>

<p>Baked oatmeal is nothing less than, well, baked oatmeal. Instead of eating it straight from the saucepan, you add all ingredients to a baking dish, cover it with nuts and more berries and put it into the oven for a few minutes. So basically it&#8217;s like a hybrid between oatmeal and crumbles. There&#8217;s not much sugar in this baked berry oatmeal, as sweet, local berries are in season right now, so it&#8217;s a healthy and wholesome breakfast option that keeps you satisfied for many hours.</p>

<p>Berries are my favorite reminder that it&#8217;s actually summer, even though the weather here tells me otherwise. They are the best antioxidant boost, protecting your body from free radical damage and chronic diseases. If you pair this oatmeal with my current favorite <a href="https://www.heavenlynnhealthy.com/turmeric-latte-golden-milk/">turmeric latte</a>, then your body is really in for a treat.</p>

As some of you know, I&#8217;ve started my Masters a few weeks ago, and it has already kept me busy, especially since I am also trying to work full time for the family business. Anyway, no excuses, there is always time for food. Especially now, when days get darker and the temperatures get colder I need a proper breakfast in order to be productive throughout the entire day. Now that does not mean that I have a huge amount of time to prepare it in the morning. In fact, I am a strong believer that breakfast can be prepared quickly without having to sacrifice on nourishment or goodness. Porridge is a great way to make a highly nutritious breakfast in no time. This quick vanilla porridge literally takes 3 minutes to prepare. Everybody has 3 minutes in the morning, right? The porridge needs another 10 minutes to sit, during which you can get ready for the day, because you don&#8217;t even have to watch it.<span id="more-2316"></span> Those of you following me on Instagram have probably noticed my addiction to coconut porridge in the morning. Well, I still love coconut porridge, but oh man, this vanilla porridge has great potential to become my next big thing. Vanilla is just perfect for this time of the year, especially now that we are getting closer and closer to Christmas. It is so comforting and really warms you from the inside.<br />

I buy my vanilla powder in a jar, but you can also use traditional vanilla pods if you like. I know that vanilla is not the cheapest, but a little jar of vanilla powder lasts me for many months, and the flavor is definitely worth it. If you love porridge and vanilla, then you are going to love this one. Trust me on this.<br />

	<p>Those of you who&#8217;ve been following me on Instagram may have noticed my slight obsession with porridge. I am not exaggerating, it really is such a delicious breakfast that provides you with enough energy to make it through a busy morning at work or at school. Porridge is also a cheap way to start your day in an extremely healthy way. Oats can be really cheap when bought in bulk, and they also don&#8217;t have to be organic in order to be healthy. If you cook your porridge with more water than milk, you don&#8217;t even need a lot of pricey plant-based milk in order to eat a plant-based breakfast. <span id="more-2199"></span></p>

<p>I admit that eating porridge for breakfast may not seem all that exciting. However, you can make it exciting by topping your porridge with delicious and flavorful toppings such as fruits, superfoods or nut butters. I prefer a mixture of all of the above to make my porridge more exciting and colorful. It&#8217;s actually quite fun to play around with different flavors and spices, like apple cinnamon or vanilla and almond. I am sure everyone&#8217;s taste is different so I&#8217;ll just provide you with my basic coconut porridge recipe and you&#8217;re welcome to play around with different toppings and flavors.
