<p>No worries, I have not gone grain-free over night. I love grains, I tolerate them well, but sometimes, it&#8217;s nice to try something new, don&#8217;t you think? This grain-free and sugar-free granola is the result of my New Year&#8217;s curiosity in the kitchen. Whereas I&#8217;m always a bit tired to try new things during Christmas time, I am always excited at the beginning of the new year, to experiment in the kitchen again. Maybe it&#8217;s that new year&#8217;s vibe, maybe it&#8217;s the gloomy post-Christmas blues that always hits me after the Holidays. <span id="more-6269"></span></p>
<p>I made this granola for my sister, who visited us over New Year&#8217;s Eve. My sister is a celiac, so she is highly sensitive to gluten, and has to avoid it at any cost. Since I was out of gluten-free oats, I decided to finally give grain-free granola a try. I&#8217;ve had it in Cape Town and in the US during my last trips over there, and to be honest, I was not really fond of it back there. The reason being that it was simply too heavy and too sweet for my liking. As grain-free granola contains soley nuts and seeds, it is quite nourishing and filling. Therefore, adding a ton of sugar to it, makes it almost not eadible in my opinion. That&#8217;s why I was super keen on making my own version with nothing but apple sauce to sweeten. And something that would give it a fresher note than the other granolas I had tried.</p>
<p>The final touch is orange peel, similar to this recipe here. It makes the world of a difference, trust me! You only add the orange peel at the end of the baking process, yet it instantly makes the whole granola smell like orange. So fresh and delicious!</p>

<p>Today is all about movement. I know I talk a lot about nutrition, recipes and healthy eating, but there is so much more to a healthy lifestyle than just food. Movement and exercise is equally important. There are various reasons why we should move our body daily. One is that exercise sort of shakes up the whole body, a process which enables our blood to flood to every single corner in the body. And even the parts of our body that aren’t connected to blood circulation, such as our vertebrae, need movement to function properly. The extra cellular fluid between our vertebrae need movement to spread to nutrients equally. That’s why a lack of exercise often shows itself in back pain.<span id="more-6044"></span></p>
<p>Of course there are plenty of other reasons to exercise more. Sports and movement in general makes us happy because it releases endorphins. It has been ever since I was a little child.</p>

<p>If you’ve been reading this blog often, then you might know I am a huge morning person when it comes to working out. It’s actually pretty bizarre, but I cannot – for the life of me – get my butt up after about 11 am. But I have lots of friends who are absolutely the other way around. If you tell them to get up at 6 am for a morning run, they would laugh in your face.</p>
<p></p>
<p>No matter if you’re a morning or an evening workout person, I’ve got just the right kind of recipe for you. An easy coconut chia pudding with Nergi kiwi. Yup. Those cuuuute little mini kiwi. I’ve always been a big fan of kiwis, but these new mini kiwis are definitely something else. To be fair, give me anything in mini and I will love it forever. But if I look at them from a nutrition perspective, the Nergi kiwi perfectly complements the chia pudding with its high Vitamin C content.<br />
Lately, I&#8217;ve totally fallen for the Nergi Mini Kiwis. Call me crazy, but I love everything in miniature. Mini muffins, mini cakes, mini kitchen utilities &#8230; no matter what it is, if it&#8217;s mini, then I have to have it. The great thing about the Nergi Kiwis is that you can eat the skin so it’s basically like eating berries. Or use them to top your overnight oats like you would with berries in the summer, without having to peel the kiwis first.</p>
<p> </p>
<p>By the way, these Overnight Oats also impress any guest of yours. The mini kiwis stick to the glass perfeclty so that you can fill the glass with overnight oats and create a wow effect sans effort. So if you want to impress a brunch guest or perhaps your kids, make them these overnight oats with mini kiwis.</p>

<p>Today I brought you an autumnal breakfast recipe: this incredibly delicious Pumpkin Spice Granola. If you live in an English-speaking country, then Pumpkin Spice is a common term in your language. If you’re German, then you’ve probably heard of pumpkin spice with regard to the American coffee chain whose Pumpkin Spice Latte is legendary (and contains a legendary amount of sugar.) By the way, have you tried my healthy Pumpkin Spice Latte?)</p>
<p>As soon as it gets uncomfortable outside, I prepare my own Pumpkin Spice mixture. It’s super easy to make and lasts all winter long. I add it to my coffee, to my golden milk, to my morning porridge and also to granola. Oh, your whole apartment will smell so wonderful, believe me!</p>
<p>Homemade granola was one of the first recipes that I tried after changing my diet. At that time I was still totally unsure of how to make the best granola. But now I think it’s safe to say that I’ve mastered the art of granola making. What’s most important is that all dry ingredients have to be covered with the sticky mix of coconut oil, maple syrup or honey and spices. You can add almost everything into the granola. It will taste good with any ingredients: nuts and seeds and all kinds of cereal flakes. Traditionally, I mostly stick to oats, but puffed millet or quinoa would also be great.</p>

This Pumpkin Spice Granola complements the warm morning porridge that I love to enjoy in the fall and winter months. Incidentally, the main ingredient of cinnamon has a positive effect on the blood sugar level. That&#8217;s why I add cinnamon to every breakfast, even in summer. A great to start the day.<br />

<p>You guys, I have a confession to make. Up until last week, I probably didn’t have a smoothie for three months! Or maybe even more. I realized that I need it to be warm and sunny outside in order to really „feel“ the smoothie vibe. I guess this has to do with me getting into the whole smoothie-world back when I lived in North Carolina. It’s really always sunny in North Carolina, and so I literally made myself a smoothie every day for lunch during the last year of my bachelor’s degree. Given that temperatures and humidity can reach extreme highs in this place of the world, drinking a smoothie packed with nutrients was so much for appealing to my sweat-drenched body than eating a huge lunch most days. Of course, I would not only have a smoothie for lunch, but the smoothie was the part I was most excited about.</p>
<p><span id="more-5754"></span>But I realized over the years, that I am such a summer-time smoothie person and that I forget about my blender all from October through March. Totally stupid, I know, but I am just always cold (due to my blood pressure meds) that I really prefer warm meals and hot drinks in the winter. I am not saying that this is a smart idea, it’s just how I feel.</p>
<p>So now that we’re basically experiencing summer in May this year here in Northern Germany, I am totally back at my smoothie game. So back, you guys. So back. For the past week, I have had this craving for blueberries, and so I have been making this blueberry zucchini smoothie every single day. Like every day. And you will, too, once you have tried it!</p>

<p>This smoothie is packed with so much goodness, I don’t even know where to begin. Let’s have a quick reign check:</p>
<ul>
<li>Blueberries: major source of antioxidants, which protect your cells from damage, aka: protect from UV radiation, protect your skin from getting early wrinkles and other signs of age. Amazing! Also, the dark pigments in blueberries, called anthoyanes, have shown to protect the body from cancer!</li>
<li>Zucchini: Mainly in this for the volume, but zucchini are also packed with minerals such as magnesium and calcium.</li>
<li>Cucumber: mostly water infused with delicious enzymes.</li>
<li>Banana: high in potassium, which is important for a healthy heart function.</li>
<li>Avocado: high in heart-healthy fats, avocado is one of the best healthy fat sources available. It is also a real skin-food!</li>
</ul>
<p><em>Are you ready for more goodness?</em></p>
<ul>
<li>Turmeric: The root is one of the best anti-inflammatory foods out there. If you can, use the fresh root.</li>
<li>Spinach: one of the best sources of Vitamin K, a bone-strengthening vitamin! But spinach also contains a good amount of iron, loads of vitamin A (think eye health!) and folate, which is especially important for pregnant women and their unborn children.</li>
<li>Lemon: probably the most well-known antioxidant out there. The vitamin C in the lemon also helps make the iron of the spinach better available for absorption.</li>
<li>Lineseed oil: first of all, every vegetable-containing smoothie needs some sort of fat in order for the fat-soluble vitamins (ADEK) to be absorbed. And Lineseed oil is one of the best sources of omega-3-fatty acids, which fight inflammation in the body and strengthen the cell membranes and the skin barrier for one. Omega-3 fatty acids are also vital for a healthy brain function.</li>

And then you’ll open the jar, put all of the ingredients into the jar, close the jar, and place it in the fridge overnight. I&#8217;ll put this into bullet points, so we can all remember it better ;-).</p>
<ul>
<li>Cut the apples into small pieces.</li>
<li>Mix all of the ingredients in a jar.</li>
<li>Place that jar into the fridge.</li>
<li>Enjoy it in the morning with a smile.</li>
</ul>

<p>I don&#8217;t think anyone can now argue that eating healthy in the morning is time-consuming or expensive. Of course, there are a few hacks that will take your overnight oats to the next level. For starters, I am a huge fan of apples in my overnight oats. Especially sweet and sour apples such as <a href="https://www.honeycrunch.com/de/" target="_blank" rel="noopener noreferrer">Honeycrunch</a>. They add a natural sweetness and tangyness to the oats. Also, they are rich in vitamin C and the fiber pectin, which keep us satisfied longer. Meaning you won&#8217;t be craving that mid-morning snack anymore. Honeycrunch apples definitely kick your morning butt out of the door with this recipe, and they stay crunchy even if soaked overnight with the oats and oat milk.</p>
<p>The other overnight oat hack is cardamom. Now, I know that not everyone is too keen on cardamom. I think it needs to go into overnight oats, but you might want to start with a pinch and then work your way up as you get used to the taste.</p>
<p>I also like to make my overnight oats with oat milk lately, because it&#8217;s a naturally sweet plant-based milk and usually requires no additional sweetener. So if you&#8217;re currently fasting sugar (not fruit sugar), then you can still enjoy this delicious breakfast.</p>

<p>Wow, seems like I introduced fall season a tad bit too early here on the blog. This week is supposed to be really warm and sunny, so I thought it was time for a little farewell to summer with a post I wrote at the end of summer.</p>
<p>A few weeks ago, summer also actually decided to pay us a visit again. If you’ve ever lived in or visited Northern Germany, then you will understand why we were so excited about this. This year, our summer was rather cold and wet, and so we enjoyed the warm sun and cloudless skies to the fullest. Luckily, we were all home at my parents’ house for my cousin’s wedding and got to enjoy a few family days. Both my sisters came to visit, too, and we spent some wonderful summer days at home with lots of laughter, teasing and of course lots of delicious food.<span id="more-5155"></span>I don’t know about you, but in my family, food always comes first. Since my sister has to eat gluten-free, we always prepare all of our foods sans gluten, so she does not have to miss out on anything. This is also much easier for all of us, since we do not have to prepare everything twice. As we are quite an active family, our Sundays usually begin with a family run followed by a delicious and healthy breakfast. Even our 13-year old dog Balu and our boyfriends tag along, so Sundays are always special in my family.</p>
<p>After a Sunday morning run, breakfast always tastes much better than usual, which is why breakfast is so important to all of us. We usually prepare lots of fruit, fresh buns and something special such as these lemony almond pancakes. They make the kitchen smell heavenly and they taste delicious.</p>
<p>Since I get so many questions about what I eat and what I don’t, let me repeat my food philosophy once again. My main reason to eat healthy is that I want to nourish my body with the best possible ingredients. I believe that food should be fuel that helps the body master everyday life, but also to protect our body from harmful outer influences. Healthy eating for me is not a trend, it’s the natural way of eating that keeps our body alive. Most of my diet is plant-based, but I am not 100% plant-based all the time. Moderation is the key in my opinion, and I do eat cheese or eggs from time to time because I love goat’s cheese and a good scrambled egg. However, I feel that the plant-based diet suits me and my body the best, and it enables me to get better through every-day life than other diets. Another thing that I believe in, is the elimination of processed sugar in our meals. That’s why I try to cook most of my meals from scratch in order to know exactly what’s in it.</p>
<p>What I love most about the plant-based diet is its huge variety. If we take milk for example, all I ever drank was cow’s milk. These days, there is such a diversity of plant-based drinks that we can choose from, which is amazing! From almond, to oat all the way until cashew milk, there are so many different kinds of drinks, which foster my creativity in the kitchen. Due to a lack of time, I do not always make my own plant-based drinks, which is why I love <a href="https://www.alpro.com/de" target="_blank" rel="nofollow noopener noreferrer">Alpro</a>’s range of plant-based drinks. Its variety of drinks reflects the plant-based diet so well.</p>
<p>Back to these lemony almond pancakes. They combine both my sister’s favorites: my middle sister LOVES everything with fresh lemons and my youngest sister is the biggest pancakes fan. When I made these pancakes for them a few weeks ago, we really celebrated them with a little breakfast picnic in the backyard. It was already pretty warm in the early morning, and so we really enjoyed the sun and the pancakes in our parents’ garden. It was such a special moment that we will cherish and remember for a long time.</p>

<p>The best part of the pancakes, however, is the lemony maple syrup drizzle – if you ask my sister May. She loved this addition and even prepared a second batch, because she loved it so much. Such a compliment for me, and I have to admit that I was a little bit proud of myself.</p>
<p>Another big plus of these pancakes is that they are only sweetened with banana, which you almost cannot taste because of the intense lemony-flavor. <p>Now, please don&#8217;t think &#8220;Boooooring&#8221; or &#8220;Lynn, we know how to make overnight oats&#8221;.</p>
<p>Well, I&#8217;m sure you do, but I&#8217;m on a mission to promote healthy eating and well-being and I have a feeling that there are still many people out there who appreciate a simple basic overnight oats recipe. For me, making the perfect overnight oats is a science and they can be a hit or miss, all depending on the right ratios of ingredients.</p>
<p><span id="more-4754"></span>When it comes to overnight oats, people seem to have lots of opinions. &#8220;They are too dry. They are too soggy. They taste weird.&#8221; &#8211; are all phrases I&#8217;ve heard people say about my favorite breakfast. But overnight oats are nothing other than soaked cereal. In fact, my boyfriend&#8217;s father used to soak his muesli in milk before serving it to him. So technically my boyfriend ate overnight oats all through his childhood, while I had not even heard about overnight oats six years ago.</p>
<h2>Why are Overnight Oats healthy?</h2>
<p>Oats contain many essential nutrients such as biotin, magnesium, iron, silicium and even B-Vitamins. Biotin is vital for healthy skin and hair, Vitamin B1 is responsible for a healthy nervous system and Vitamin B6 is required for healthy blood. It is also needed during the production of seratonin, a happiness hormone, so oats can literally make you happy.</p>
<p>By soaking oats overnight, they are much better digestible. The reason why you should soak them for a few hours before eating them, lies in the phytic acid. Phytic acid is contained in the outer layers of grains, beans, nuts and legumes and protects the food from sprouting in the pantry. Once sprouts are in the ideal environment, phytic acid helps them sprout because it is a source of energy for them. For humans, however, phytic acid inhibits the ideal absorption of many nutrients such as zinc, magnesium, iron and calcium. Soaking the grains such as oats, breaks down the phytic acid. Adding small amounts of acid liquid such as vinegar or lemon juice is said to activate phytase, an enzyme that breaks down phytic acid.</p>
<h2>It&#8217;s all about the perfect ratio</h2>
<p>I mix my overnight oats with a ratio of 1:1,5. For every cup of oats, I use 1.5 cups of oat milk to soak them. In grams and mililiters that equals 100 grams of oats and 375ml of oat milk. Sometimes it happens that I add just a little bit more milk until the oats are completely covered, but there is a small step between just right and too soggy, so be careful not to add to much milk. Then I add two tablespoons of chia or freshly ground flax seeds.</p>
<p>If you have a gluten intolerance, then make sure to use certified gluten-free oats as well as certified gluten-free oat milk. Unfortunately that one can be hard to find, so almond milk would work as well, or you can make your own gluten-free oat milk with this recipe.</p>
<h2>Toppings-Party:</h2>
<p>The next morning, you&#8217;ll have yourself a delicious pot of overnight oats, and this is where the fun begins. Now you can add all the ingredients that you love and that will nourish your body. As breakfast is, for many people at least, the healthiest meal of the day, it&#8217;s extremely important that we treat our body with extra goodness in the morning. Here&#8217;s a list of my favorite toppings, but feel free to chose your own.</p>

<li>homemade granola</li>

<p>It finally feels like summer, the farmer’s market is selling local strawberries and you can see people wearing shorts and sandals all over town. I love the feeling of the first summer days. The warm temperatures have me craving berries for breakfast, lunch, and dinner – and dessert. That’s why I came up with these healthy strawberry muffins that I know you’re going to love just as much as I do.<span id="more-4666"></span></p>

<p>I find it strange that every café in my city is somehow offering blueberry muffins, but I never see strawberry muffins. I know that they are supposed to be too watery for baked goods, but I strongly disagree. Strawberries work just fine for making muffins. I made mine with the first local strawberries that I could get my hands on, and they tasted delicious without turning out too watery. You should definitely not try this recipe with frozen strawberries though as they will definitely make the muffins too runny.</p>

<p>For the batter, I used a mix of oat and brown rice flour, added some arrowroot powder as a binding ingredient and aluminum-free baking powder as a raising agent. I know that many healthy baking recipes do not have baking powder in them, but I think as long as you go for the aluminum-free powder, there’s nothing wrong with adding some rising ingredients to your muffins. It’s just something I prefer in baked goods – but of course, everybody’s taste is different.</p>

<p>For sweetener, I used coconut blossom sugar as they are also suitable for diabetics because they do not have such a strong impact on our blood sugar level as refined sugar has. This has the effect that the energy is released more slowly and sustainably, giving us the power we need to get through a long afternoon at work without craving something sweet an hour after eating the muffins.</p>

<p>Of course, you can also try mixing the strawberries with other berries such as raspberries, blueberries, or blackberries, but I’m all about the delicious strawberry taste at the moment.</p>

<li id="instruction-step-2">Start by mixing the flax seeds and water and set aside to thicken for 10 minutes.</li>
<li id="instruction-step-3">Ground the oats to flour using a mixer or food processor. Add the rice flour, baking powder, vanilla, arrowroot powder, and sea salt and mix until combined.</li>
<li id="instruction-step-4">In a separate bowl, mix the warm coconut oil with the coconut blossom sugar, oat or almond milk, sparkling water, lemon juice, and zest and the flax mix. Stir until combined.</li>
<li id="instruction-step-5">Add the wet ingredients to the dry ingredients and stir until just combined. Do not overprocess, or the muffins might not start to rise.</li>
<li id="instruction-step-6">Cut the strawberries in small squares and mix them into the batter using a spatula.</li>
<li id="instruction-step-7">Align a muffin form with baking paper or muffin holders and put two to three tablespoons of the batter into nine molds. I prefer my muffins larger, so I only get nine out of the batter, but you can make 12 small ones.</li>
<li id="instruction-step-8">Bake the muffins for 25-30 minutes and then set them aside to cool before removing them from the molds.</li>

<li>I have also tried making these muffins with a gluten-free flour mix from Alnavit (millet &amp; brown rice with guar gum) and they turned out just as delicious and fluffy.</li>
<li>If you&#8217;re not gluten-free, I suggest using whole-grain spelt flour as an alternative to brown rice flour. However, I like the naturally sweet taste of the oat flour, so I would suggest a mix of spelt and oat flour.</li>
<li>You can leave out the arrowroot powder when using spelt flour.</li>
<li>You can make these muffins with other berries, too, such as raspberries, blueberries, or blackberries.</li>

<p>Before I start talking about today’s recipe, I want to take a quick moment to thank you for all the lovely comments under my last post “<a href="https://www.heavenlynnhealthy.com/healthy-inspiration-may/" target="_blank">Healthy Inspiration in May</a>“. Your comments were so honest, so real and so touching, and I feel truly blessed to have such amazing readers. I am honored that so many of you have shared their happy moments and their not so happy moments – it’s so important to note, that not everything you see on Social Media is real. Trust me, it’s not – nobody’s life is perfect.<span id="more-4630"></span>Now, on to this rhubarb-strawberry parfait. The timing could not be better, because this parfait is just waiting for you to make it for Mother’s Day tomorrow. As we all know, tomorrow is a big day for all the Moms in this world (or at least in Germany), and so I thought: why not treat your Mommy with a healthy but oh so delicious breakfast parfait. It basically screams “I love you, Mom” and “don’t worry, it’s healthy”. Besides that, why don’t you also cook your Mom a lovely lunch or dinner (find some inspiration <a href="https://www.heavenlynnhealthy.com/category/mains/" target="_blank">here</a>, and <a href="https://www.heavenlynnhealthy.com/category/salads/" target="_blank">here</a>), and treat her like the most important person in your life. At least that’s what my mom did for the past, well, 27 years.</p>
<p>If you can’t find or do not like rhubarb, you can easily use strawberries or other berries for the compote instead. Berries are also naturally sweeter than rhubarb, so you might not even need any coconut blossom sugar at all. However, I love rhubarb, it’s sour taste and the way it tastes combined with vanilla and strawberries. It reminds me that summer is just around the corner and waiting for us to embrace it.</p>
<p></p>
<p>If you do not tolerate the oxalic acid in the rhubarb well, then you might want to take the following precautions when preparing rhubarb: make sure to steam or cook the rhubarb in water for a couple of minutes before making the compote. This way, most of the oxalix acid will be absorbed by the water and leaves the roots. The water needs to be drained and you can start making compote with the already soft rhubarb. I tend to tolerate rhubarb fine, so I usually do not worry so much about it, but if you’ve had issues with rhubarb in the past, it might be due to the oxalic acid.</p>

Simply mix the oats with the oat milk, chia seeds and honey and let sit in the fridge for at least 30 minutes, preferably overnight (it makes the oats better digestible).</li> <li class="instruction" itemprop="recipeInstructions">The next morning, make the rhubarb compote. Cut the ends of the rhubarb and cut the reddish parts of it into bite-sized pieces. Place them into a pot with the water, vanilla and vanilla pod and let simmer on medium heat until soft. This might take between 5 and 7 minutes. Make sure to watch it the whole time, so it does not burn. Add more water if desired. Once the rhubarb is soft, sweeten with the coconut blossom sugar according to your taste. <p>Before I&#8217;ll share the recipe for this post with you all, I just wanted to take a quick moment to thank you for your incredible support. Without you, this blog would simply not exist. You really make this blog what it is, whether you&#8217;re living in Germany, the U.K, in the U.S. or in Brasil &#8211; your support means the world to me, and I thank you from the bottom of my heart for cooking my recipes, for commenting on my posts, and for sending me so many personal emails, and simply for being there.<span id="more-4572"></span>I read every single comment on my last giveaway and it seems very clear that quick and easy packable lunches are the clear winners of my small survey. Therefore, I will try and come up with more &#8220;to-Go&#8221; recipes in the future.</p>
<p></p>
<p>Now on to this beetroot latte. I am always searching for coffee alternatives, because frankly I do not like coffee. I have to admit that I still drink it, because I like this morning routine where you get up, make a coffee, and take some time to read the newspaper or simply watch the sunset. Very strange for someone, who talks so much about eating and living healthy, right? Well, I never drink more than two cups a day (not even cups, more like tea pots) so I do not worry about it too much. Yet, I know that coffee is bad for people with blood pressure issues, so I try to cut back as often as I can.</p>
<p>This beetroot latte combines all the best ingredients and even helps regulate my blood pressure &#8211; how amazing is that? It&#8217;s also ridiculously easy to prepare &#8211; just take a shot of beetroot juice, combine it with frothed milk and some sweetener of your choice and you&#8217;re good to go.</p>
<p>I do not buy the juice, but make it at home with my juicer &#8211; so of course I do not just turn this thing on for a shot of beet juice. I always make a carrot, beetroot, apple, ginger, lime juice, so that&#8217;s another bright side of this beetroot latte.</p>
<p>To be fair, just like my turmeric latte, I know that this beetroot latte will not appeal to everyone. Don&#8217;t beat yourself up if you don&#8217;t like it or if you do not even want to give it a try. Beetroot does have a slightly earthy taste, and to be honest, you have to love beetroot juice if you want to like this latte. I don&#8217;t want to fool you &#8211; this latte does not taste like coffee. I think it tastes much better, much more exciting and yes &#8211; it does taste healthy.</p>
<p>But healthy, isn&#8217;t a bad thing now, is it?</p>

<p>So I think it&#8217;s time that we talk about bread.</p>
<p>I know that there are many dietitians out there who praise that bread is the root of all evil (aka the reason why you&#8217;re not losing weight). Well, unfortunately that might be true, but in my opinion it all comes down to moderation. There is a big difference between having a slice of bread complimentary to your big bowl of vegetable stew and making bread the main part of your meal (which is frankly what the German culture is all about FYI).<span id="more-4464"></span>That white bread is bad for your health is no longer a mystery, and you probably also all know that whole-grain is your healthy go-to option. However, many people think that alternatives such as rye or spelt are always whole-grain, which is why rye or spelt breads are booming everywhere. The thing is, however, that these breads are nothing else than white bread with a fancy name.</p>
<p>To understand the difference between white flour and whole-grain flour, we have to look at the whole kernel. It consists of three different layers: the inner layer, which is the starch, the middle layer, which is the oily part and the outer layer, which is the fiber, hence, the thickest layer. The nutrients of the kernel sit in the middle and the outer layer. These layers are removed for white flour. Yup, all that remains is the starchy inner layer with close to zero nutrients.</p>
<p>White flour can be made of wheat, rye, spelt, barley etc. Only by grinding the whole grains can you get whole-grain flour. Sort of obvious, but many people do not know that. If you have a strong blender or food processor, it is wise to blend your own grains because the longer whole-grain flour is stored, the more nutrients are oxidized, meaning the more nutrients are lost.</p>
<p></p>
<p>For this recipe, I&#8217;ve teamed up with the amazing <a href="http://www.lecreuset.de" target="_blank"><em>Le Creuset</em></a>, because I&#8217;ve been making my bread mainly in my Dutch oven lately. <p>Thank you for all your warm comments regarding my blog birthday under my last post. It&#8217;s so crazy that Heavenlynn Healthy is already two years old. Time really flies by. I did a little poll regarding what your favorite recipes from my blog are, and it was pretty clear that many of you especially like my porridge recipes. So this post is dedicated to all of you, my readers from all over the world. <span id="more-4361"></span></p>

<p>To be honest, I never expected my porridge recipes to be the most popular ones on the blog as I can never follow any porridge recipe. I always improvise because I never have time in the morning to follow a step by step recipe. So I was very surprised that many of you appreciate healthy breakfast recipes. From now on I will try to upload one breakfast recipe per month.</p>
<p>So now to this delicious pear and hazelnut porridge. Since it&#8217;s still winter here in Germany, I try to keep my porridge toppings as seasonal as possible. Well, obviously blueberries and blackberries are NOT in season right now, but I had them for a different photo shooting and needed to use them (which I did not mind, tbh as I LOVE all kinds of berries). They also just look so crazy pretty in porridge pictures.</p>
<p></p>
<p>I&#8217;ve been trying out different types of plant-based milk lately, and I must say that my favorite is still oat milk, which I use for porridge most mornings. However, I have come to love hazelnut milk, too, because it tastes a little bit like nutella if you mix it with a bit of raw cacao. It really tastes delicious, and if you like plant-based milk, then you will love hazelnut milk. It also goes really well with the pear and almond butter (though of course you could use hazelnut butter as well).</p>

<p>I do feel kind of silly posting a simple recipe like this, but I can most definitely say that it&#8217;s absolutely delicious!<br />

If it gets too dry, add more hazelnut milk.</li> <li class="instruction" itemprop="recipeInstructions">Finally add the honey or maple syrup for a final stir.</li> <li class="instruction" itemprop="recipeInstructions">Once it's all mixed, pour into two bowls and garnish with the toasted hazelnuts or almonds, pear, berries and more almond butter.
