Attention, guys. Your breakfast is about to get 10 times better.

The reason is this super delicious jar of crunchy apple overnight oats that’s about to be your favorite new breakfast. Even better: this recipe is the ultimate proof that healthy breakfast requires zero effort. Are you as excited as I am?All you got to do is buy all oft he ingredients, although I’m betting that most of you already have all of them in your pantry. And then you’ll open the jar, put all of the ingredients into the jar, close the jar, and place it in the fridge overnight. I’ll put this into bullet points, so we can all remember it better ;-).

Cut the apples into small pieces.

Mix all of the ingredients in a jar.

Place that jar into the fridge.

Enjoy it in the morning with a smile.

I don’t think anyone can now argue that eating healthy in the morning is time-consuming or expensive. Of course, there are a few hacks that will take your overnight oats to the next level. For starters, I am a huge fan of apples in my overnight oats. Especially sweet and sour apples such as Honeycrunch. They add a natural sweetness and tangyness to the oats. Also, they are rich in vitamin C and the fiber pectin, which keep us satisfied longer. Meaning you won’t be craving that mid-morning snack anymore. Honeycrunch apples definitely kick your morning butt out of the door with this recipe, and they stay crunchy even if soaked overnight with the oats and oat milk.

The other overnight oat hack is cardamom. Now, I know that not everyone is too keen on cardamom. I think it needs to go into overnight oats, but you might want to start with a pinch and then work your way up as you get used to the taste.

I also like to make my overnight oats with oat milk lately, because it’s a naturally sweet plant-based milk and usually requires no additional sweetener. So if you’re currently fasting sugar (not fruit sugar), then you can still enjoy this delicious breakfast.

What are your favorite breakfast recipes in a jar? I’d love to hear it in the comments below.

It’s Overnight Oats-time, everyone!

Now, please don’t think “Boooooring” or “Lynn, we know how to make overnight oats”.

Well, I’m sure you do, but I’m on a mission to promote healthy eating and well-being and I have a feeling that there are still many people out there who appreciate a simple basic overnight oats recipe. For me, making the perfect overnight oats is a science and they can be a hit or miss, all depending on the right ratios of ingredients.

When it comes to overnight oats, people seem to have lots of opinions. “They are too dry. They are too soggy. They taste weird.” – are all phrases I’ve heard people say about my favorite breakfast. But overnight oats are nothing other than soaked cereal. In fact, my boyfriend’s father used to soak his muesli in milk before serving it to him. So technically my boyfriend ate overnight oats all through his childhood, while I had not even heard about overnight oats six years ago.

Why are Overnight Oats healthy?

Oats contain many essential nutrients such as biotin, magnesium, iron, silicium and even B-Vitamins. Biotin is vital for healthy skin and hair, Vitamin B1 is responsible for a healthy nervous system and Vitamin B6 is required for healthy blood. It is also needed during the production of seratonin, a happiness hormone, so oats can literally make you happy.

By soaking oats overnight, they are much better digestible. The reason why you should soak them for a few hours before eating them, lies in the phytic acid. Phytic acid is contained in the outer layers of grains, beans, nuts and legumes and protects the food from sprouting in the pantry. Once sprouts are in the ideal environment, phytic acid helps them sprout because it is a source of energy for them. For humans, however, phytic acid inhibits the ideal absorption of many nutrients such as zinc, magnesium, iron and calcium. Soaking the grains such as oats, breaks down the phytic acid. Adding small amounts of acid liquid such as vinegar or lemon juice is said to activate phytase, an enzyme that breaks down phytic acid.

It’s all about the perfect ratio

I mix my overnight oats with a ratio of 1:1,5. For every cup of oats, I use 1.5 cups of oat milk to soak them. In grams and mililiters that equals 100 grams of oats and 375ml of oat milk. Sometimes it happens that I add just a little bit more milk until the oats are completely covered, but there is a small step between just right and too soggy, so be careful not to add to much milk. Then I add two tablespoons of chia or freshly ground flax seeds.

If you have a gluten intolerance, then make sure to use certified gluten-free oats as well as certified gluten-free oat milk. Unfortunately that one can be hard to find, so almond milk would work as well, or you can make your own gluten-free oat milk with this recipe.

Toppings-Party:

The next morning, you’ll have yourself a delicious pot of overnight oats, and this is where the fun begins. Now you can add all the ingredients that you love and that will nourish your body. As breakfast is, for many people at least, the healthiest meal of the day, it’s extremely important that we treat our body with extra goodness in the morning. Here’s a list of my favorite toppings, but feel free to chose your own.

fresh berries

banana

nuts & seeds

hemp seeds

bee pollen

homemade granola

almond butter

peanut butter

cashew butter

cacao nibs

mulberries & goji berries

I hope this little guide was helpful and you’ll know enjoy your overnight oats much more than you have before. Let me know what your favorite healthy breakfast choices are, in the comments below.

Beetroot Latte – because we all need more coffee alternatives in our lives.

Before I’ll share the recipe for this post with you all, I just wanted to take a quick moment to thank you for your incredible support. Without you, this blog would simply not exist. You really make this blog what it is, whether you’re living in Germany, the U.K, in the U.S. or in Brasil – your support means the world to me, and I thank you from the bottom of my heart for cooking my recipes, for commenting on my posts, and for sending me so many personal emails, and simply for being there.I read every single comment on my last giveaway and it seems very clear that quick and easy packable lunches are the clear winners of my small survey. Therefore, I will try and come up with more “to-Go” recipes in the future.

Now on to this beetroot latte. I am always searching for coffee alternatives, because frankly I do not like coffee. I have to admit that I still drink it, because I like this morning routine where you get up, make a coffee, and take some time to read the newspaper or simply watch the sunset. Very strange for someone, who talks so much about eating and living healthy, right? Well, I never drink more than two cups a day (not even cups, more like tea pots) so I do not worry about it too much. Yet, I know that coffee is bad for people with blood pressure issues, so I try to cut back as often as I can.

This beetroot latte combines all the best ingredients and even helps regulate my blood pressure – how amazing is that? It’s also ridiculously easy to prepare – just take a shot of beetroot juice, combine it with frothed milk and some sweetener of your choice and you’re good to go.

I do not buy the juice, but make it at home with my juicer – so of course I do not just turn this thing on for a shot of beet juice. I always make a carrot, beetroot, apple, ginger, lime juice, so that’s another bright side of this beetroot latte.

To be fair, just like my turmeric latte, I know that this beetroot latte will not appeal to everyone. Don’t beat yourself up if you don’t like it or if you do not even want to give it a try. Beetroot does have a slightly earthy taste, and to be honest, you have to love beetroot juice if you want to like this latte. I don’t want to fool you – this latte does not taste like coffee. I think it tastes much better, much more exciting and yes – it does taste healthy.

But healthy, isn’t a bad thing now, is it?

Pear and Hazelnut Porridge for a healthy start in the morning.

Thank you for all your warm comments regarding my blog birthday under my last post. It’s so crazy that Heavenlynn Healthy is already two years old. Time really flies by. I did a little poll regarding what your favorite recipes from my blog are, and it was pretty clear that many of you especially like my porridge recipes. So this post is dedicated to all of you, my readers from all over the world.

To be honest, I never expected my porridge recipes to be the most popular ones on the blog as I can never follow any porridge recipe. I always improvise because I never have time in the morning to follow a step by step recipe. So I was very surprised that many of you appreciate healthy breakfast recipes. From now on I will try to upload one breakfast recipe per month.

So now to this delicious pear and hazelnut porridge. Since it’s still winter here in Germany, I try to keep my porridge toppings as seasonal as possible. Well, obviously blueberries and blackberries are NOT in season right now, but I had them for a different photo shooting and needed to use them (which I did not mind, tbh as I LOVE all kinds of berries). They also just look so crazy pretty in porridge pictures.

I’ve been trying out different types of plant-based milk lately, and I must say that my favorite is still oat milk, which I use for porridge most mornings. However, I have come to love hazelnut milk, too, because it tastes a little bit like nutella if you mix it with a bit of raw cacao. It really tastes delicious, and if you like plant-based milk, then you will love hazelnut milk. It also goes really well with the pear and almond butter (though of course you could use hazelnut butter as well).

I do feel kind of silly posting a simple recipe like this, but I can most definitely say that it’s absolutely delicious!

Warm and nutritious carrot cake oatmeal to add more veggies to your breakfast bowl.

Hello veggie lovers! I realized that I did not eat enough veggies last week, so I tried something totally new and crazy: veggies for breakfast. Being German usually means that I enjoy a sweet breakfast more than a savory, so I never really thought about adding vegetables to my morning oatmeal. Until the other day, when I had some grated carrots left from the salad I had the night before. I simply added them to my oatmeal with some cinnamon, cardamom, ginger, honey and toated walnuts, and I was in carrot cake heaven!

I never knew that vegetables for breakfat tasted so amazing!

Having carrots for breakfast is also extremely healthy. They are a great beta carotene source, a Provitamin that is turned to Vitamin A in the body. Vitamin A is vital for a healthy vision and an overall healthy immune system. Adding some grated carrots to your oatmeal is an easy way to increase your beta carotene intake already early in the morning.

This Carrot Cake oatmeal is also the easiest thing in the world. All you need to do is add your grated carrots to your oats, almond milk and a few of spices and let it cook for a couple of minutes. The carrots add a lovely sweetness to the oatmeal, and literally make your breakfast taste like carrot cake. Carrot cake is probably my all-time favorite cake in the entire world, so there you go. You’re very welcome that you now have an excuse to have cake for breakfast that even strengthens your eyesight.

This recipe is all new in my column over at „Ohhh….Mhhh“ one of my favorite lifestyle blogs. If you’re a German lover or like to see how my recipes look on another blog, feel free to check out Steffi’s blog and my column.

Orange granola for a bright and happy start of the day!

Winter is the season of citrus fruit, and even though it is the darkest time of the year, all the oranges, tangerines, lemons and limes brighten up any day, don’t you think? They are just like sunshine, and that’s why I love using them in my recipes in these cold and dark winter months. This orange granola will bring so much sunshine into your kitchen that you are bound to start the day in a happy and positive way.

Now, this granola isn’t like any other granola. It also isn’t granola covered in orange juice – it is much more fragrant and delicious than that. The key to this orange granola is using the zest, not the juice.

I got the idea from our English friend Sandra, the mother of my sister’s former flatmate Ellie. When my sisters and I visited Ellie and her family near Watford last year, her mom made us the most delicious dinner and breakfast (and everything else), and we were definitely in food heaven. We were especially addicted to her granola, because that’s what this granola is: addicting. Therefore I am not claiming credit for this idea, this is all Sandra.

Spending time with Ellie and her family showed me once more, how special it is to have friends all over the world. There is nothing more precious than being invited into a family’s home, because that’s how you get to know and understand a different culture. It does not happen when you simply visit the tourist sites of a country. Talking, laughing and exploring the country with locals is worth so much more, and I am very grateful that Ellie’s family hosted us for the two days.

Thank you, Sandra, for the lovely inspiration and for having us!

Turmeric porridge to start the new year 2017 right!

The Holidays are over, and I took a few days off as well, so I am feeling totally energized and ready for the new year! During the days between Christmas and New Year’s Eve, I worked out a lot, especially in the morning. My family is pretty active, so all of us usually started the last weeks with a morning run with Balu, and my boyfriend and I then completed the run with a yoga session. It was so nice to get our bodies moving after all of the food and festivities around Christmas. This turmeric porridge was my go-to porridge recipe in the last four weeks, so I thought it would be the perfect first recipe for the new year 2017!

I am the biggest fan of turmeric as you may have noticed. I add it to all of my recipes (here’s the evidence turmeric latte, turmeric and vanilla post yoga pot, turmeric smoothie, cucumber salad with beluga lentils and turmeric vinaigrette and much more), and recently I’ve started to add it to my porridge, too.

I was inspired by this recipe during my latest Amsterdam visit, where I finally got to go Lavinia Good Food, one of the cutest and most delicious restaurants in the city. They served a delicious turmeric porridge, so I just had to recreate it! Thank you, Lavinia, for the inspiration. By the way, if you’re planning your city trips this year, you have got to add Amsterdam to your list. It’s one of the healthiest cities in Europe, and I have just completely fallen in love with the city! I love it so much, that I’ve written a complete Amsterdam City Guide about my experiences in this lovely city.

I totally love this porridge in the winter months as it is so full of warm spices. Turmeric has many health benefits, which is why it is the number one health spice used in the ayuvedic kitchen. It is commonly known for its anti-inflammatory properties, high antioxidant amount and phytonutrients. Historically it has been helping people with tooth aches, menstrual pains, bruises or colics. Most of the health benefits are traced back to the main compound, curcumin, which also gives turmeric the bright yelllow color.

Several medical studies have reven related turmeric, and its compound curcumin, to cancer prevention of colon, skin or pancreatic cancer. Of course most of those studies have used large amounts of turmeric to achieve the desired results, which is unrealistic if you don’t want to eat an entire turmeric root every day (trust me, it would almost be like eating an entire ginger root). So all we can do is start small, and increase our daily turmeric intake by adding it to porridge, lattes, curries, sauces or dressings.

As you can see, Balu also very much wanted a taste of it, but unfortunately porridge is not for dogs. I just thought it would be cute to add to this post, as the new year is all about happiness and joy, and he brings me so much joy!

It’s this time of the year again: as the leaves start falling, the days get shorter and the mornings colder, I have been craving spiced fall porridge again. I don’t know why I have not posted it last fall, but I am glad I didn’t because now I’ve had just about a year to perfectionate it. With every bite of this delicious spiced porridge, you can feel fall on your tongue. The flavors of this season are so warm, comforting and sensual that I can hardly wait for it to be completely and totally fall again. It’s by far my favorite season and I am longing for it to never end at this moment of the year. As the days get shorter, I love eating healthy and fast breakfasts in the morning, because we all love healthy fast food right? That’s why this is my entry for the lovely Janine from Nuts and Blueberries who is running a little blogger carnival with the motto #HealthyFastFood 4. On October 1st Janine will publish all the entries of her blogger carnival, so if you’re looking for healthy but fast food inspiration, be sure to pay Janine’s wonderful blog a visit.

When I write about fall, I “fall” into a melancholic mood , a good mood, as I remember all the good memories that this season has provided me with during my lifetime. But there are also some unpleasant memories that I associate with fallen leaves, so I thought I’d do a little re-capturing of what fall meant to me as a child:

Here’s what I loved about fall when I was a child:

making little animals with chestnuts

coming home in dirty rubber boots and jackets

lantern walks

kites flying in the brisk air

decorating windows with pressed leaves

coming home from ballet lessons and eating hot pumpkin soup

reading books while cuddled up in a blanket

oatmeal

Saturdays

Here’s what I hated about fall as a child:

raking the leaves in my grandparent’s backyard

riding my bike home from school in the rain

track & field practice outside (also in the rain)

Sundays

I used to be (or I still am) quite a sensitive person. So as a child, Sunday nights were the worst for me as they meant that the weekend was over and that I had to be back in school in just a few hours. It’s not that I didn’t like school, I loved it, but I was just so sad that the weekend was over. However, what I loved about fall was that my mom would get up extra early on school days to prep us a fresh orange juice and porridge so we would get in all the nutrients for an eventful school day. I remember that I did not instantly fall in love with porridge (I was more the chocolate granola kind of kid), but I ate it from time to time, and now I could not imagine starting my fall and winter days with anything else.

This spiced fall porridge is not only heavenly creamy, it’s also loaded with goodness that will fill you up on cold mornings. The warm oats melt in your mouth and the spices such as ginger, nutmeg or allspice are so comforting and exactly what you need in the morning. Porridge really fills you up, too, so it’s a great breakfast for blood sugar regulation as you won’t get energy lows around mid-moring.

What’s you favorite breakfast in the colder seasons? And what are your best and worst childhood fall memories?

I’m strolling though London with my sisters today, but I nevertheless prepared this blueberry bircher muesli parfait with coconut yoghurt so you can add another recipe to your To-Do list or save the bazillions-th recipe to Pinterest. I realized, that there’s actually not that many breakfast recipes on the blog yet, so I’ll try to come up with more creative ways to start the day in the near future.

So I have developed a slight obsession for breakfast in a jar last week. I don’t know why it has never occurred to me before, but if I eat my breakfast out of a jar, and layer it in a pretty way, I feel like having breakfast in a nice healthy hipster café. Which is exactly what we are doing here in London right at this moment (at least I hope so, we’ve got SO many healthy eating places on our list, my sisters are probably already annoyed by my healthy eating obsession). I’ll be sure to make a healthy eating in London guide, when I’m back home.

Anyways, now to this blueberry bircher muesli parfait with coconut yoghurt. What good does it do to your body? First of all, it’ll keep you satisfied in the morning as it’s full of fiber from the oats and nuts. The later also provide healthy protein and mono-unsaturated fats, which keep your heart healthy. Blueberries are basically antioxidiant goddesses (I’m just assuming here that they are ladies), because they get the glow on your skin and help fight free radicals that can cause oxidative stress in our body. Coconut yoghurt is amazing for your gut as it contains probiotics, which aid digestion. Be careful when you buy your coconut yoghurt though, you want it to be free of nasty preservatives and added sugars.

If you can’t find coconut yoghurt, then any other plant based yoghurt works just fine. I am just not a big fan of soy yoghurt, as it is often full of nasty ingredients. In the USA I would probably opt for almond or hemp yogurt. Or, if you’re not completely plant based like me, you could also go for greek yoghurt instead.

If you live in Germany like me, then you know that summer is once again being a diva over here. It’s been a typical northern European summer this year: lots of rain, wetness, cold and only occasional peaks of sunshine. I was lucky to be able to spend the last two weeks in Austria with the most beautiful weather, but coming home was such a disappointment weather-wise. I did not feel like cold smoothies at all these past mornings, and I even felt like making oatmeal for breakfast. Instead, I chose this summer baked berry oatmeal, which is a nice change from my usual healthy bircher muesli in the morning. It’s so nice to eat something warm for breakfast, without feeling like it’s already fall or winter.

Baked oatmeal is nothing less than, well, baked oatmeal. Instead of eating it straight from the saucepan, you add all ingredients to a baking dish, cover it with nuts and more berries and put it into the oven for a few minutes. So basically it’s like a hybrid between oatmeal and crumbles. There’s not much sugar in this baked berry oatmeal, as sweet, local berries are in season right now, so it’s a healthy and wholesome breakfast option that keeps you satisfied for many hours.

Berries are my favorite reminder that it’s actually summer, even though the weather here tells me otherwise. They are the best antioxidant boost, protecting your body from free radical damage and chronic diseases. If you pair this oatmeal with my current favorite turmeric latte, then your body is really in for a treat.

Have you ever tried baked oatmeal? What’s your favorite flavor combination?

Today I’d like to introduce you to a new breakfast favorite of mine: raw strawberry peach buckwheat porridge. As we are getting closer to summer, I feel myself craving something other than oats for breakfast, because everyone needs a change sometimes, right? I’ve tried raw buckwheat porridge a couple of weeks ago, and instantly fell in love. Buckwheat is such a wonderful pseudo grain, that keeps you satisfied for hours! I knew buckwheat was a wholesome, protein-rich pseudo grain, but I had no idea it keeps you that full. Say good-bye to mid-morning cravings and sugar lows – this raw strawberry peach buckwheat porridge will be your new best friend in the morning.

When you try raw buckwheat porridge for the first time, it’s important that you pair it with something sweet and delicious like strawberries and peaches, apple or banana or fresh summer berries. Strawberry and peach is my favorite flavor combination in the summer, it brings back so many great memories of great vacations, home made ice cream and the beach.

Buckwheat has amazing health benefits such as the ability to lower blood pressure and cholesterol. It also contains all 9 essential amino acids, making it a complete protein. The high protein and fiber content are responsible for keeping you satisfied for hours, giving you lots of energy for a successful morning. I like to prepare the raw buckwheat porridge at night, so it can soak over night. In the morning, all you have to do is to throw all the ingredients into a food processor. You can easily put it in a jar and take it to work with you, too.

I’m sorry for this super short recipe description, but I just did not have time to write a whole lot this week. As some of you know, I’ve started my Masters a few weeks ago, and it has already kept me busy, especially since I am also trying to work full time for the family business. Anyway, no excuses, there is always time for food. Especially now, when days get darker and the temperatures get colder I need a proper breakfast in order to be productive throughout the entire day. Now that does not mean that I have a huge amount of time to prepare it in the morning. In fact, I am a strong believer that breakfast can be prepared quickly without having to sacrifice on nourishment or goodness. Porridge is a great way to make a highly nutritious breakfast in no time. This quick vanilla porridge literally takes 3 minutes to prepare. Everybody has 3 minutes in the morning, right? The porridge needs another 10 minutes to sit, during which you can get ready for the day, because you don’t even have to watch it. Those of you following me on Instagram have probably noticed my addiction to coconut porridge in the morning. Well, I still love coconut porridge, but oh man, this vanilla porridge has great potential to become my next big thing. Vanilla is just perfect for this time of the year, especially now that we are getting closer and closer to Christmas. It is so comforting and really warms you from the inside.

I buy my vanilla powder in a jar, but you can also use traditional vanilla pods if you like. I know that vanilla is not the cheapest, but a little jar of vanilla powder lasts me for many months, and the flavor is definitely worth it. If you love porridge and vanilla, then you are going to love this one. Trust me on this.
